Abstract

OAT lipase is located in the outer pericarp layers of the groat and can be removed by wet-brushing1. Using this technique with 20 gm. of groats per 100 ml. distilled water, a suspension is obtained which contains c. 98 per cent of the total active lipase. From such extracts oat lipase has been purified approximately 1,700-fold on a dry weight basis compared with the original activity in oatmeal.
