Abstract

ABSTRACTCalabash and bottle gourd seed were analyzed for their proximate, mineral, and anti-nutritional composition using standard techniques. The calcium, zinc, and phytate interrelationship was computed. The results showed that calabash and bottle gourd seeds contained 4.0 g/100g moisture, 45.0 and 47.8 g/100g crude fat, 37.2 and 35.0 g/100g crude protein, and 8.1 and 7.3 g/100g carbohydrates, respectively. The most abundant mineral element in the seed flours was potassium, while selenium and chromium were not detected. Antinutrients in the seed flours were tannic acid (1.21 and 1.70 mg/100g), phytin phosphorus (1.05 and 0.82 mg/100g), phytic acid (3.71 and 2.88 mg/100g), and oxalate (1.39 and 1.58 mg/g) in calabash and bottle gourds, respectively. The computed calcium, zinc, and phytate interrelationship showed that zinc bioavailability may not be impaired in diets based on these seed flours. Calabash and bottle gourd seeds are good sources of dietary proteins, crude fat, and nutritionally important minerals.
