Abstract

A study was conducted to evaluate different sesamum cultivars for their nutritional and anti-nutritional quality in the Department of Agricultural Biochemistry, CSAUA&T, Kanpur. The range of variability of test weight (g), oil (%), protein (%), oxalate (mg/g) and polyphenol (mg/g) was observed as 2.82–3.88, 40.90–52.80, 17.89–29.17, 0.42–4.14 and 1.19–9.2, respectively in sesamum genotypes/varieties. Lowest contents of oxalate and polyphenol and highest nutritional constituents viz. oil content and protein content were found to be in genotype - AT-413.
