Abstract

The goal of the present work was to analyze aqueous extracts of fenugreek herb using NMR spectroscopy. Experimental. We used variety Ovary Gold cultivated in the Central Botanical Garden, NAS of Belarus. Runner tips and leaves were collected in July (fl owering). The raw material was stored in a dark place until air-dried and then ground. Two extraction modes were used. In the fi rst, the extraction mixture was stirred for 4 h in a thermostat at 60°C. The extractant was distilled H2O at a raw material:extractant ratio of 1:15. The fi ltered extract was evaporated in a rotary evaporator at 60°C and 0.1–0.096 MPa to produce a dry residue (26.4 mass% of the starting raw material). Dry extract (40 mg) dissolved in D2O (0.5 mL) was used to record NMR spectra. The second extract was obtained by soaking fenugreek herb (0.055 g) in D2O
