Abstract

Long-term, CHEW aims to reduce childhood obesity, especially among ethnically diverse, low-income children. CHEW’s educational materials assist USDA’s Women, Infants & Children (WIC) program families with 2-4 year olds; WIC grocers serving this population; nutrition and medical students; and health providers. CHEW research has identified significant ethnic differences in diet composition/food preparation. Extension is assisting 10 WIC-approved grocers in marketing more fresh produce. Education has reached >1,100 college and medical students and hundreds of providers and educators throughout Tennessee. Outcomes include: culturally tailored nutrition education; access to fresh produce in neighborhoods; and childhood obesity learning objectives in medical trainee curricula.
