Abstract
Intelligent packaging in foodstuffs refers to a type of packaging that contains intelligent agents such as detectors and sensors. This type of packaging is used to convey information about food quality and increase the safety of foods. Also, intelligent packaging warnings about possible problems in food packages. Sensors and markers are capable of measuring physical, chemical, or biological variables in food products. Among different sensors, color sensors and biosensors are widely used in the food packaging industry. Color sensors are used as labels in intelligent packaging. Color sensors allow you to control product quality, track critical points, and gather more information about packaging. The purpose of this paper is to investigate the application of food freshness markers, based on the color change in packaging of food products, in response to microbial metabolites.
