Abstract

Three cyanogen bromide peptides from native goat β-lactoglobulin have been isolated by gel-filtration. The N-terminal fragment has been identified and its sequence was determined to be: Ile-Val-Thr-Gln-Thr-. The results are compared with the N-terminal region of cow β-lactoglobulins A and B.
