Abstract

【目的】食品ロス削減のために,飲食店で適量を超えた提供で食べきりを促進すると,客の過剰摂取により健康課題につながる可能性がある。本研究は,飲食店に着目し,健康も考慮した食品ロス削減に取り組む自治体の実態と具体的な取組内容を整理することを目的とした。
