Abstract

To prospect any value of animal resource of the emu as new domestic fowl, we analyzed albumen components in emu and nine other birds by SDS-polyacrylamide electrophoresis. The electrophoresis pattern of emu was quite different from that of chicken and other birds. Proteins with identical mobilities to chicken ovalbumin and lysozyme, major allergic proteins in chicken albumen, were not found in emu albumen. Emu egg could be promising as an alternative food for allergic patients against chicken albumen.
