Abstract

豆類およびその加工品中の少糖類を,80%ethanolで抽出後,その一定量を採り,乾燥させTMS化し,GLCを用いて定量する方法を設定した. この定量法の精度は,変動係数で表わすと,含有量1%未満の少糖類の定量の場合,平均4.1%(範囲:0.00~16 .43%),含有量1%以上の少糖類の定量の場合,平均3.8%(範囲:0.44~8.08%)であった. この定量法の正確さは,raffinoseの添加回収試験の結果,回収率が89.3%から102.0%となったことから,良好であると考えられた.
