Abstract

Additional evidence was presented to indicate that myrosinase is a two enzyme system. The two components were separated on a DEAE column. Total hydrolysis occurred only when both components were present. The thioglucosidase factor was shown to have essentially the same specificity as almond emulsin and to be capable of hydrolyzing several β-glucosides. The sulfatase factor showed no hydrolysis of ethereal sulfates or sulfate esters other than esters of the type contained in the mustard oil glycosides. Several sulfonated oximes were hydrolyzed in the presence of this factor.
