Abstract

Measurements have been made of the shear modulus as a function of biopolymer concentration for pure potassium kappa carrageenate gels. The results have been discussed on the basis of rubber elasticity theory to investigate the free polymer linkages between junction zones within the gels. Pulsed electric birefringence studies have been made on segmented kappa carrageenan as a model for the junction zones of the gel.
