Abstract

Microwave oven method and hot air oven method have been compared for moisture determination of jaggery. It has been observed that microwave method took 2-3 min. as compared to 18-20 h by standard air oven method for moisture determination of jaggery. The results obtained by microwave oven method compared well with those obtained by hot air oven method. No statistical difference was observed between pre cent moisture values of jaggery samples by microwave drying and hot air oven drying.
