Abstract
Nondestructive measurement of moisture content (MC) and oil content (OC) is crucial for online processing ofred pepper powder. A 10MHz pulsed 1 H NMR system (NMS110), free induction decay (FID), and spinecho pulse techniqueswere used to measure moisture and oil contents of red pepper powder nondestructively. Prediction models for MC and OCwere developed using FID and spinecho signals. The model for MC using an FID signal had an SEC of 1.05% and an SEPof 0.94%. The model for OC using a spinecho signal had an SEC of 0.60% and an SEP of 0.53%. A model for simultaneousmeasurement of MC and OC was developed. To measure MC and OC simultaneously, both FID signal and spinecho signalswere used. After measuring MC, the spinecho signal was divided by the FID signal. This ratio was used for measuring OC.The r 2 values of validation for MC and OC measurement were 0.98 and 0.95, respectively, and the SEP was 1.09% and 0.85%,respectively. The results demonstrated that the lowresolution pulsed NMR system could be used for simultaneousnondestructive MC and OC measurements of red pepper powder.
