Abstract

Compressive tests with various constant loads and subsequent unloading by means of modified penetrometer measurements of deformation kinetics are performed on cylindrical apple flesh specimens. The measurements are taken at a variety of loads and analysed by means of a mechanical model, the constitutional equation of which is described. Thus, a complete mechanical model for the deformation behaviour of apple flesh is developed and checked. The mechanical model derived suitably describes the deformation behaviour of apple flesh within a wide range of loads.
