Abstract

In earlier chapters, I have examined many examples of milk processing systems in Eurasia. Here, employing the milk processing units designed to simplify descriptions, I shall condense and abstract as far as possible the descriptions of the complex milk processing systems found in these concrete examples. Through this, I shall attempt to develop a suitable analytical method for comprehending and comparing the internal structures of milk processing systems of different ethnic groups, and then examine how this method should be applied. Finally, I shall reconsider the effectiveness of Nakao’s model by comparing it with the model based on milk processing units.
