Abstract

AbstractHeating of a monoacid diacylglycerol‐α‐iodohydrin or diacylglycerol‐β‐iodohydrin with silver nitrite or silver nitrate in a mixture of alcohol and water leads to an (equilibrium) mixture of the corresponding αβ‐and αγ‐diglycerides. Preparation of a monoacid αγ‐diglyceride in a good yield by this method, which is due to E. Fischer, is possible only if the acyl group of the diacylglycerol‐iodohydrin has a strong tendency towards migration in acid medium, thus, for instance, if it is a fatty acid radical.
