Abstract
ABSTRACTWater samples from four points in a commercial broiler processing plant were compared to evaluate the feasibility of recycling processing water to the giblet flume without bactericidal treatment. Five microbiological parameters were examined: total aerobic counts, total and fecal coliform levels, salmonellae incidence and levels. By all methods of evaluation microbiological quality of water was best from the gizzard splitter and worst from the giblet flume. Giblets leaving the flume were microbiologically equal to giblets leaving the chiller despite differences in water quality. Apparently untreated water from the giblet splitter or chiller could be recycled to the giblet flume without sacrifice of product quality.
