Abstract

Abstract Tannases are biotechnological important enzyme distributed throughout the plant, animal and microbial kingdom. Tannase has received a great deal of attention from the discovery, and it is extensively used in food, animal feed, pharmaceutical, beverage, brewing, tannery and chemical industry. Tannin acyl hydrolase (E.C 3.1.1.20) commonly referred as tannase, which hydrolyses the ester bond of hydrolysable tannin, gallotannin, ellagitannin to produce gallic acid, glucose and galloyl ester. A compressive and illustrative review on microbial tannase for modern biotechnological aspects is presented. The present review emphasis on microbial sources, fermentation conditions, purification and biotechnological advances of tannase enzyme.
