Abstract
A colour code-based Time Temperature Indicator (TTI) is a consumer-friendly option to monitor the freshness of packaged milk. This study aimed to develop a micro-perforation-based external TTI label that is cost-effective, efficient and on-time activation. To understand the spoilage of milk, various quality parameters at storage conditions, 4 ± 1, 27 ± 2 and 37 ± 4 °C, were evaluated. The Ea of the developed TTI was co-related with the Ea of spoiled packaged milk. An activated TTI label was sticked on the milk packet to check its applicability. The TTI changes colour from green to red, indicating spoilage of packaged milk.
