Abstract

Results of the investigations on galactan gelation carried out in the Institute of Organoelement Compounds are reviewed. It is shown that a helical conformation of kappa-carrageenan and agarose is not a prerequisite for gelation of solutions of these galactans. Gelation of agarose is completely governed by hydrogen bonding. In kappa-carrageenan gelation the decisive role belongs to intermolecular coordination binding of cations promoting gelation (proved for K + ions).
