Abstract
A rapid, accurate, objective method of measuring the small color differences of tomato purees has not been available heretofore. A method is described in which puree colors are measured with a Hunter Color-Difference Meter. Specifications are interpreted on a chromaticity diagram showing location of Munsell constant hue and chroma lines at a lightness level intermediate for most tomato purees. Appearance as interpreted from the chromaticity diagrams was in nearly perfect agreement with appearance scored on a visual basis.
