Measurement and modeling of atmospheric pressure vapor-liquid equilibrium data for binary, ternary and quaternary mixtures of sucrose, glucose, fructose and water components. Fluid Phase Equilibria, 93: 337-351. Experimental vapor-liquid equilibrium (VLE) data have been obtained on binary, ternary and quaternary mixtures for synthetic sugar juices composed of water, sucrose, glucose and fructose. The data were obtained at atmospheric pressure using an Othmer apparatus. To fit the equilibrium data, the Peng-Robinson and the Lee-Kesler equations of state as well as the NRTL model were used. Binary interaction parameters for these models were identified using the maximum likelihood principle. The results showed that the Peng-Robinson equation of state produced a better fit of the experimental data as well as a better prediction of the boiling point curve for a quaternary mixture.
