Abstract

Mass spectra of butyl esters of volatile fatty acids including n-chain, branched-chain, and unsaturated fatty acids were obtained using GC-MS. Primary fragmentation of butyl esters gave major peaks at m/z 73, 56, 41, 101, M 73, M-55, and M-101. Additionally, characteristic fragmentation ions were observed at m/z 74 for 2-methyl-branched fatty acids, at m/z M-43 for iso-acids, and at m/zM-29 for anteiso acids. Characteristic ions were observed at m/z 88 and m/zM-28 for 2-ethyl-branched fatty acids, and an ion at M-29 was observed for ethyl branching in positions other than the 2-position. Methyl-branched, ethyl-branched, and dimethyl-branched fatty acids were found in milkfat and meat lipids.
