The making process of brown sugar has already been progressed and practiced hereditary by the people of North Sulawesi. The technic for making is relatively diverse from one place to another and rarely changes from time to time. In Kayawuvillage it was found many of palm trees, whether are planted in an agroforestry system, as well as growing wild. Palm trees farmers in the area also develop derivative products from brown sugar, namely palm sugar which its manufacturing process requires a longer time, but has a higher economic value. The purpose of this research is to know the methods of making palm sugar in Kayawu Village. Research methods are done qualitatively. The technic of data collection was done by means of observation and interviews. The technic of collecting the informants used snowball sampling method. Results of the study showed that the quality of the resulted palm sugar was affected by several matters such as the source of used bunches, time of tapping and the stability of the flame. From 100 liters sap tapping from the bunches, it will be produced 10-15 kgs of palm sugar. Knowledge about the making of palm sugar comes from experiences and knowledge which is hereditary.
