Abstract

This chapter focuses on principles and applications of machine vision technology in the food processing technology. Machine vision technology was used in various industrial applications to read and verify letters, symbols, and numbers. Machine vision technology is one of the fastest adopted technologies in food processing industry. Quality maintenance of snacks, chips and bakery products is a challenging problem in the food industry. The 1990s brought a boom of growth to the machine vision industry. Machine vision application in meat industry can be grouped as: determination of composition, fat/muscle ratio, marbling, measurement and evaluation of size and volume, measurement of shape parameters, quantification of the outside or meat color, and detection of defects during quality evaluation. Machine vision process involves the capturing, processing and analysis of images, with others observing that it aims to duplicate the effect of human vision by electronically perceiving and understanding an image.
