Abstract

The prospect of increasing the production of milk in the United Kingdom by 20 per cent in the next few years and the fact that the UK is only 53 per cent self‐sufficient in milk products indicate good prospects for the dairy engineer. There will be fewer, larger herds requiring more sophisticated equipment for milking, milk cooling and measurement. Developments in equipment for milk processing, packaging, butter and cheese manufacture and, especially, membrane separation processes are expected. There will be increasing emphasis on energy conservation. There is an urgent need for increasing State‐aided research in process engineering for the dairy industry.
