Abstract

Longitudinal fascicular growth was studied in longissimus muscles of Yorkshire pigs from 5 to 135 kg hot carcass weight. Fascicular length and longissimus muscle cross sectional area (LM-CSA) kept increasing right up to the heaviest carcass weights studied. In the analysis of data, areas and weights were reduced to their square and cubic roots, respectively. Correlations of carcass weight to fascicular length and carcass weight to LM-CSA were .86 and .96, respectively. Each millimeter of growth in fascicular length added .708 mm to the maximum depth of the LM-CSA. Maximum depth was measured perpendicular to maximum width.
