Abstract

Sucrose and oils were detected by NMR spectroscopy in an intact maize seed. These compounds were located in the seed by an 1H-NMR image and 1H-NMR localized spectra using an NMR microscope. Oils were in the embryo and pericarp while most of the sucrose was in the endosperm. Oil composition was estimated by spin-simulation using a 13C-NMR spectrum.
