Abstract

This study analysed the intra-genotype variation of the spelt grain lipid fraction, including the content of total lipids, sterols, tocols, carotenoids, composition of fatty acids and resultant antioxidant capacity (ORAC and DPPH assays) of grain lipophilic extract. The sample material was composed of sixteen spelt genotypes grown under the same environment conditions in Poland (location, climate and agriculture treatment). The obtained results showed relatively narrow intra-genotype variation in determined lipid content, phytochemicals and fatty acid shares, followed by the highest variation in antioxidant capacity. For phytochemicals and antioxidant capacity, the most outstanding was Line 54–76, which was the richest source of sterols and had the highest antioxidant capacity (approx. 2-times higher in relation to other genotypes).
