Abstract

The paper aims at analyzing the possibility of expanding the range of fat substitutes (F.S.) as potential ingredients, or products of foodstuff additives with controlled functioning. The first part of the paper analyzes the influence of processing parameters on unconventional homogenous polyethoxylate fatty acids synthesis. The researches, part of research programs of the Department for foodstuff additives technology and of PhD training courses aim at synthesizing a new class of glycerides (mono-, di-, and tr-) with colloidal structure and features controlled by modifying (HLB value) of homogenous ?-lauryl/ miristil (7/3) polyethylenoxy (n = 020) propionic acids synthetisised by a series of adapted classical reactions [cyano-ethylation in basic catalysis of lauryl/ miristil (7/3) alcohol as such and polyethoxylate (n = 020)] followed by total acid hydrolysis of the intermediary thus obtained [?-lauryl/miristil (L/M) (7/3) polyethylenoxy (n = 020) propionic and subsequently controlled esterification with glycerin or transesterification with natural lipid fractions (vegetal oils)]. The results are presented in four table, wich contain: dependence of total acid hydrolysis yield of homogenous ?-lauryl/miristil (7/3) oxypropionitrile, process time 60 minutes, temperature 90C, by molar ratio water/ LM-O-PN, 2/1, molar ratio HA/ nitrile; dependence of total acid hydrolysis yield of homogenous ?-lauryl/ miristil (7/3) oxypropionitrile, molar ratio HA/ nitrile 4/1, process time 60 minutes, molar ratio water/LM-O-PN, 2/1, by temperature; dependence of total hydrolysis yield of homogenous ?-lauryl/ miristil (7/3) propionitrile, molar ratio HA/nitrile 4/1, temperature 90 C, molar ratio water/ LM-O-PN 2/1, by time process; dependence of total acid (HCl) hydrolysis yield of homogenous ?-lauryl/miristil (7/3) propionitrile, molar ratio water/ LM-O-PN 4/1, temperature 90C, process time 60 minutes, molar ratio water/ LM-O-PN 2/1, by alcohol amount lauryl/ miristil (7/3) polyethoxylate ( = 39).
