Abstract

In the current study, the changes of non-starch and starch lipids in two rice varieties during storage were investigated based on untargeted lipidomic approach. A total of 395 non-starch lipids and 13 starch lipids were identified in two rice varieties. 171 lipids in Nanjing and 6 lipids in Jianzhen were significantly different in stored rice compared to those in the fresh ones. Bioinformatics analysis on these significantly different lipids revealed that the two rice varieties possessed different lipids metabolic pathways during storage. Our study provides insights into the mechanism of the changes in non-starch and starch lipids in rice during storage.
