Abstract
This chapter describes lipases from extremophiles and discusses their potential for industrial applications. Lipases constitute the most important group of biocatalysts for biotechnological applications. They have conserved 3D structures but lack a high-sequence homology and display a wide diversity of properties. Commercially, they are used in multiple applications and because of this, the search for novel lipases continues. The more enzymes being discovered from organisms in extreme environments, the more exceptional features will be discovered. An example is the two lipases from the slightly alkalithermophile Thermosyntropha lipolytica exhibiting high thermostability and activity above 90 °C and at alkaline pH. However, for industrial application, besides exhibiting the desired properties, these enzymes also have to have a high level of expression—that is, efficient over expression of their genes in a suitable host. The special stability and activity ranges of lipases from extremophiles, different from most mesophilic host protein, offer easy and simple purification steps by employing the extreme conditions.
