Abstract

THE MILK OF THE FULAS AND AFRICAN COOKING The Fulas draw the distinctive mark of their ethnicity from their consumption of milk. The writer studies the production, transformation and consumption process from a technical and symbolic point of view, from the "village" park for the cows to the kitchen which is the domain of the woman. He shows how, at all stages, milk is involved in the construction of the Fula's identity.
