Abstract

Pasta is probably the most important and famous element in the Italian cuisine. The pasta has, in the past two centuries, become a symbol of Italy and it's elementary culture world wide, starting with the massive Italian immigration to the USA. It has at the same time been an important contribute to the creation of a national identity for the Italian population. Playing a central role in this process, the possibility of mass consumption as a result of the economical changes in the second half of the twentieth century is anyhow the main reason for it's success.
