Abstract
The analysis of fatty acids by capillary electrophoresis has been expanding over the last ten years. From the first approaches performed by CZE with acids presenting short normal chains, studies become more diversified thanks to the potentialities offered by capillary electrophoresis (use of micelles of various nature, study in non aqueous media). So, analyses of complex mixtures of fatty acids from C 10 to C 24 , with normal and substituted chains have been successfully performed.
