Abstract

Capacity subject in the accommodation sector is being scrutinized through the number of rooms-beds for accommodation services and the number of chairs, couvert or tables in food and beverage services but there seems to be no approach in terms of time. In accommodation establishments that are service establishments having labor-intensive and synchronicity of production and consumption characteristics. The time, which is a product itself, should be examined in terms of capacity as well. Accommodation establishment managers should approach to the time with a strategic perspective and apply strategic methods and techniques in the calculation of efficiency, costs, capacity utilization of performed activities other than classical methods and techniques to achieve business objectives. In this study, formulas and time equations which shows how to measure the time-based actual capacity and average activity-time capacity data per guest in accommodation establishments are presented. Accommodation establishment managers shall obtain a strategic knowledge of actual capacity data supporting the decisions to be taken in the form of time-activity planning, employee planning and cost measurement through proposed formulas and time equations.
