Abstract

The kinetics of thermal inactivation of trypsin and chymotrypsin inhibitors in black bean flours were studied as a function of the water activity of the product. For both inhibitors, two periods of distinct thermal resistance were determined at temperatures above 100°C, each following a first-order reaction kinetics model, and showing a maximum thermal sensitivity at water contents corresponding to the range of intermediate moisture values.
