Abstract

Gelatinized starches containing boric acid were characterized by the analysis of their dry process. Kinetic analysis of drying process of them revealed that the rate constants of moisture loss from gelatinized starches in the presence of boric acid were correlated with pH value of aqueous solution that was used for preparing the gelatinized starch. pKa values of boric acid in the gelatinized starch determined by this analysis were lower than that of boric acid in water, indicating that borate anion was able to be formed highly concentrated polyol-aqueous system.
