Abstract

Lard with methionine was oxidized under the active oxygen method (AGM). The oxidation products of methionine were investigated. Two oxidation products of methionine were isolated and determined by IR, NMR and synthetic identification as methionine sulfoxide and methionine sulfone, respectively.Antioxidative effect of methionine was attributed to the decomposition of the peroxide of lard to give the sulfoxide and sulfone.
