Abstract

With regard to the importance and position of food industries in generating higher employment rate (in comparison to other industries in Iran), and also it's vital role in the economy of Iran, the present study aims to examine the factors affecting labor productivity in food industries of Iran over the 1995 till 2009. The results of the study show that specialization of the employees has the most effect on labor productivity. The parameter of specialization is 0.66 followed by ratio of skilled workers to unskilled workers. The factors like education, skill, specialization, and capital per worker have effects on productivity differences in Iranian food industries. The trend of technical changes has a fluctuation during the time period. Further, the study shows that the progress of technology has not any effects on labor productivity in food industries of Iran.
