Abstract
The binding of some food dyes with bovine plasma albumin is investigated to know correlation between the free energy of binding and toxicity.Food dyes. studied include Tartrazine, Yellow 2G, Red 2G, Red 6B, Ponceau 3R, Ponceau R and Ponceau SX. The free energy of binding is usually given for the first associatien, ΔF10, in order to avoid a decition as to n, the number of sites. The values of ΔF10, for the binding of these dyes with bovine plasma albumin, are in the neighborhood of -6, 000 to -7, 000cal. /mole by the Scatchard's equation. The Ponceau R and Ponceau 3R are calculated at -6, 950 and -7, 400cal. /mole as the value of ΔF10, at pH 7.0 Under the same condition, Tartrazine is calculated at -6, 130cal. /mole. In this paper the results of free energy and parameters in the binding are described and discussed.
