Abstract

In recent years, electronic nose technology has been widely used for food quality evaluation, especially for the food industry due to its many advantages compared to traditional detection methods and technologies, which may be not suitable for online quality control of food products. There are many reports regarding the electronic nose and its applications at home and abroad. To understand this instrument and the technology comprehensively, we introduce the basic principles and procedures of the electronic nose in this chapter. Of course, the advantages and limitations, recent technology developments, and further application prospects are also provided. Finally, we summarize and forecast electronic nose technology for food quality evaluation.
