Abstract

Kalialia is one of the Lea-Lea sub-districts in Baubau City. Kalialia can be developed as a center for agricultural products, especially corn, rice, and tubers such as sweet potatoes, cassava, poisonous sweet potatoes (Dioscorea hispida), and plantation crops such as cashew nuts. The Gadung tubers (Dioscorea hispida dennst), which exist there are many prospects to be developed into a source of healthy and nutritious local food. Processed tubers can be substituted with other food ingredients such as seaweed to diversify local food to enrich the diversity of food products, preserve local food and realize national food independence. The main obstacle to using gadung tubers is its high cyanide toxicity and is very dangerous if the processing method is not appropriate. The results of using gadung tubers that are safe for consumption are continued by making preparations (and chips) based on gadung tubers flour and seaweed flour to make them more nutritious and healthy. The analysis of the remaining cyanide content after a combination of physical and chemical methods was 2.87 ppm or decreased by 95.77%. The dominant nutritional value of chips products added with seaweed flour is carbohydrates and crude fiber. The results of the organoleptic test of chips products with and without seaweed flour substitution are in the likes and very like categories.
