Abstract

Abstract Dry beans ( Phaseolus spp. L) contain several bioactive components or compounds that have been linked to the prevention of chronic diseases such as diabetes, cardiovascular disease and cancer. The purpose of this study was to determine the anticarcinogenic potential of dry beans: pinto beans (P), black-eyed peas (B), and soybeans (S) on Azoxymethane (AOM)–induced aberrant crypt foci (ACF) in Fisher 344 male rats. After a 1-week acclimatization period, 40 rats were randomly assigned to 5 groups, control (C) received AIN-93G diet; groups P, B, and S received the treatment diets consisting of C+20% levels of the above mentioned beans. Rats in the fifth group served as negative control. At 7 and 8 weeks of age, all rats except the negative controls received subcutaneous injection of AOM at 16 mg/kg body weight. Rats were euthanized at 17 weeks of age by CO 2 asphyxiation. ACF (mean ± SEM) ranged from 41 ± 4 to 183 ± 23 in rats fed C, P, B and S. ACF reductions compared with the C were 64%, 77%, and 56% in rats fed P, B, and S, respectively. Glutathione S -transferase activities were significantly higher ( P
