Abstract

A concomitant increase in the synthesis activity of lipase from Rhizopus arrhizus and water activity (aw) was shown until an optimum level, observed at a water activity (aw) of 0.3 with a linoleic acid incorporation of 75%. A regular decrease occured above aw 0.3. The synthesis was specific for α 1–3 glycerol positions since monoacyl-sn-glycerol and 1,3 diacyl-sn-glycerol were preferentially synthesized. Glycol ester synthesis was achieved with lipase from Rhizopus arrhizus, but the reaction was lower than the glycerol ester synthesis. This difference can be explained by the presence of a secondary alcohol group or an apolar group which reduces the synthesis rate.
