Abstract

Efficiency of ultrasonic treatment on the activity and conformation of porcine pancreas lipase (PPL) were studied in this paper. The results showed that low-intensity ultrasonic treatment could enhance PPL activity. The specific activity of PPL increased by 72% immediately after ultrasonic treatment at 6 min, 140 W, and 5/10 s. The PPL conformation changed and unfolded after ultrasonic treatment, as suggested by ultraviolet absorption spectrum, fluorescence emission spectrum and Fourier transform infrared spectroscopy. The conformation rearrangement continually was some relative but not relative completely to increase the specific activity of PPL. Only when the ultrasonic-treated PPL had a better orientation and unfolded appropriate could increase specific activity.
