Abstract

A study was carried out on the effect of the substrate on the accumulation of nitrates by vegetable products. It was revealed that the intensity of accumulation depends on the method of application and the origin of the fertilizer, but to a greater extent - on the species characteristics of crops: some crops do not accumulate excess nitrates even when fertilizing (carrots, spinach), while others intensively accumulate them when grown in unenriched soil (beets, zucchini, parsley). Even with the rational use of fertilizers on a substrate with organic fertilizer, an excess of the permissible norm was found in potato tubers, beet roots, parsley and dill leaves, onion bulbs, zucchini fruits, and on a substrate with fertilizer of mineral origin - in beet roots, onion bulbs, zucchini fruits, parsley and lettuce leaves, which indicates the need to strengthen control over the content of this contaminant in vegetable products.
