Abstract

The effect of the duration of high-temperature hydrolysis-extraction on the yield and parameters of pectin from various sources has been studied. It is shown that the variation in the duration of the process leads to a phased conversion of high-molecular aggregated pectin macromolecules into samples enriched with galacturonic acid units with a narrow molecular weight distribution. The results give an additional opportunity to directively control the hydrolysis-extraction process in order to obtain the desired product in high yield and specified parameters.
