Abstract

The influence of exopolysaccharide (EPS) of lactic acid bacteria Streptococcus thermophilus on the development of the Lena sturgeon when grown in an experimental aquarium was studied. It has been shown that the addition of EPS S. thermophilus to the feed of sturgeon fish contributes to an increase in the rate of growth and development of fish without adversely affecting the fish organism, and also improves the organoleptic characteristics (taste and texture) of fish meat.
